Raisin Loaf Recipe

Original recipe acquire from Anna Olson.


3/4 cup orange juice
1 3/4 cup plain flour
1/2 cup sugar
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 large egg
1/4 cup vegetable oil
3/4 cup raisin


  1. Sift plain flour. sugar, baking soda, baking powder and salt into a bowl.
  2. In a separate bowl, whisk together egg and oil. Add egg mix and orange juice into the flour mixture and stir until blended.
  3. Stir in raisin and scrape into a grease loaf pan.
  4. Preheat oven to 180 degree Celsius and bake for 25 minutes. 
  5. Let cake cool before remove from pan. 

I had change the baking time from original 45 minutes to 25 minutes because I tested that my cake had already thoroughly cook by that time. I had also removed pitted dates and cloves from the original recipes because I can't seems to locate them in my local supermarket. 

This is a different outlook from my previous Mixed fruit cake. The outer crust is more crispy, as for the inner cake texture, I prefer the cake from the previous recipe.
