Butter Cookies Recipe

Recipe acquired from Christine's Recipe.


150gm plain flour
30gm corn flour
20gm custard powder
160gm butter
50gm icing sugar
1/4 tsp vanilla extract
1 tsp baking powder

  1. Sift plain flour, corn flour, custard powder and baking powder into a bowl.
  2. In another large bowl, whisk butter and icing sugar together until fluffy and pale. Then mixed in vanilla extract.
  3. Slowly sift flour mix into the butter mixture. Beat at low speed.
  4. Lightly knead into a dough. Then wrap in plastic cling wrap and refrigerate for 20 minutes.
  5. Pre-heat oven to 180 degree Celsius. Line tray with baking paper.
  6. Shape the cookie as preferred at approximately 1cm thick. Bake for 15 minutes.

After refrigerating the dough for 30 minutes, it is still too soft for me to shape it. Thus I'm unable to make a consistent round shape. The cookie had a nice buttery taste, but is too bristle for my preference. I will try a more milky butter cookie next time.
