Mixed Fruit Cake Recipe

Original recipe from Food Lovers 'Something Sweet'

90g butter
100g dried fruit mixed
90g sugar
2 large eggs
90g plain flour
1 tsp baking powder
50g ground almonds
icing sugar for dusting

  1. Put butter and sugar in large bowl and beat together until thick and creamy. Gradually beat in eggs and stir in the flour with the baking powder and ground almonds.
  2. Mix half the dried fruits into the batter. 
  3. Preheat oven to 180 degree Celsius and butter an 20cm cake pan and line the base with baking parchment.
  4. Turn the batter into the prepared cake pan and put the remaining dried fruit on top.
  5. Bake in oven for 20-30 minutes. Remove from cake pan and leave to cool. Dust with icing sugar before serving. 

I should have sift in the icing sugar to have a more coherent dusting. Don't pinch in with your fingers like I do.
