Lemon Cupcakes Recipe

Original recipe from Food Lovers 'Something Sweet'


11g butter
115g caster sugar
Finely grated zest 2 lemons plus 2tbsp lemon juice
2 eggs, beaten
 75ml milk
150g plain flour
1 tsp baking powder
pinch of salt
150g icing sugar

  1. Put the butter and sugar in a large bowl and using an electric whisk, beat together until light and fluffy
  2. Beat in the half lemon zest, eggs and milk, a little at a time, until combined
  3. Sift in the flour, baking powder and salt and gently fold into the mixture until well mixed. Spoon the mixture equally into muffin cases.
  4. Preheat the oven to 190 degree Celsius. Bake in the oven for about 20 minutes until golden brown and springy to the touch. Leave in the pan for 5 minutes to cool.
  5. To make the frosting, sift the icing sugar into a bowl and stir in the lemon juice, mixing well until smooth.
  6. Spoon a teaspoon of frosting on top of each cupcake, spreading it out to cover the tops completely. Sprinkle a little of the remaining lemon zest on top of each cupcake to decorate.

The cake was nice and fluffy in the middle. The top layer of the cake right after baking have a little crunchy texture. However, the icing from the recipe above is too sweet for our taste.
